I have twenty years experience in many phases of the food service industry, from bakeries, coffee shops cafe, bar and grill, fine dining, contract catering, and institutional meal planning. I have 6 years of post secondary education; I majored in microbiology and food science University of WI 1982-85, University of MN 1990-93 In 2001 I attended the Cooking and Hospitality Institute of Chicago; I worked fulltime and maintained a 4.0 GPA typical workday involved; serving from 1000-2000 students, preparing meat, fish or poultry for roasting, braising or grilling, preparing complimentary sauce, starch and vegetable. Organizing and prioritizing prep work, maintaining sanitary work space. I formulated, adapted and scaled recipes utilizing local and fresh ingredients.
